The most popular Ramadan dessert in Kokan is Pez! We have many different varieties of pez but this almond one is very common. People usually make pez in large quantities and share it with neighbours. It's a healthy dessert that keeps you cool after a long day of fasting and Taraweeh prayer.
The authentic recipe calls for milky extract from soaked whole wheat but you can replace that with wheat starch for a quick fix. You can skip ghee altogether if you are avoiding fats. And if allergic to dairy, you can replace milk with coconut milk but then you'll have to compromise for taste. ;)
Almond Pudding Recipe | Almond Pez Recipe | Badam Gehu Ki Pez
Ingredients:
- 1 cup almonds
- 1/2 cup wheat grains
- 1/2 litre milk
- 2" stick of cinnamon
- 1/2 cup sugar (or as per taste)
- 1 tablespoon desi ghee
- A pinch of saffron strands
- 1/4th teaspoon salt
- Cardamom powder for fragrance
- Raisins, chopped nuts, saffron etc. For garnishing
Method:
1. Soak wheat in water overnight or for at least 8 hours. Then gringo with just a little water and strain through fine sieve to get the milky extract. Half a cup of wheat will give around 1 cup extract as we are going to add water for grinding.
2. Blanch almonds by keeping then in boiling water for a minute then run cold water and remove the skin. Grind blanched almonds to fine paste using just a little milk.
3. Take a clean heavy bottomed pot and pour wheat extract in it. Add salt and cinnamon stick and 2-3 tablespoons of water and let it cook on medium heat. Keep stirring to keep it from sticking to the bottom.
4. After the above mixture thickens and raw smell is gone completely, remove it from burner and add sugar, milk and almond paste and cook with continous stirring till the desired consistency of pudding is attained.
5. Add cardamom powder and saffron just before turning off the heat and mix well.
6. Pour in bowls and garnish as you wish.
Note: if using wheat starch or wheat flour then make slurry of flour with water and proceed as you do with wheat extract.
Taje care that, No lumps should form in pez.
