Zaatar Cheese Omelette

Zaatar Cheese Omelette with Layered Paratha and Tea

It's a powerpacked, healthy breakfast menu which I absolutely love having on weekends. As it's a filling menu and the aroma of zaatar is really tempting makes you feel hungry even if you really are not, I find it's an ideal suhoor meal 😂😋😋

Zaatar is a middle eastern blend of dried thyme, oregano, marjoram and tossed sesame seeds which is then seasoned with salt and optionally with sumac. It has got many health benefits which toucan Google but I personally feel is surely does help improve my mood and gives a fresh feeling. Also helps digestion and soothes stomach ache caused by acid reflux. So, in short, I just love zaatar lol.

Recipes:

For omelette:

  • 2 eggs
  • 1 tablespoon chopped fresh parsley (or you can use cilantro/coriander)
  • 1 green chilli finely chopped
  • 1/4th teaspoon salt (or as per taste)
  • 1 tablespoon mozzarella cheese
  • 1 tablespoon cheddar cheese
  • 1 tablespoons zaatar
  • 1/2 teaspoon sumac
  • 1 tablespoon butter

Directions:

1. Beat eggs in a bowl. Add chopped fresh parsley (or coriander/cilantro leaves), chopped green chilli and salt. Mix well.
2. Heat butt in a frying pan and as the butter starts to sizzle add pour the egg mixture and spread by moving the pan.
3. Let it cook for a minute or till the surface is dried then flip the omelette and put both the cheeses. Sprinkle some zaatar and sumac and fold the omelette once nice golden brown underneath.
4. After cheese melts, remove in serving plate and sprinkle remaining zaatar and sumac. Serve!

Note: you can add finely chopped bell peppers or any other vegetables of your choice in the egg batter.
You can replace butter with olive oil or any other cooking oil or cooking spray.

For layered paratha:

  • 1 cup whole wheat flour
  • 2 tablespoons melted ghee (or oil)+1 tablespoon for applying while rolling
  • 1/2 teaspoon salt
  • Water to knead the dough
  • Dry flour for dusting
  • Ghee for sekoing the paratha

Method:

1. Take flour in mixing bowl and add salt and melted ghee. Rub well with your fingers then knead the dough adding water little by little.
2. Now make small portions of the dough and roll thin disks. Apply melted ghee and dust little dry flour. Fold the dough starting from one end to other to make a rolled cigar (so that you can get the layers) now twist it and make spiral round disk and roll into a roti.
3. Roast on hot tawa applying ghee little by little to get crispness. Serve hot.

Tea:

Everybody has their own preference for tea and no recipe can be considered as perfect for everyone but here I'm just sharing the way I make tea. I don't like sugar in milk tea always but sometimes if I have some savoury snacks with tea I do add sugar.

  • 1.5 cup milk
  • 1 cup water
  • 2 black tea bags
  • Sugar as per taste

Method:

Bring milk and water to a boil and then add tea bags and cook till you get desired concentration. Add sugar if desired and your tea is ready! 😊
