Baked Chicken with Vegetables and Lemon Sauce


Nicely baked, rich in flavours, loaded with vegetables with a side of lemon sauce, this baked chicken was a perfect dinner.

Baked Chicken with Vegetables and Lemon Sauce Recipe:




Ingredients:

For 12 pieces of chicken

  • 1 teaspoon crushed black pepper
  • 1 teaspoon chili flakes
  • 1 teaspoon cumin powder
  • 1.5 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried thyme
  • 2 tablespoons cooking oil
  • 1 medium sized carrot
  • 1 large potato
  • 1 medium sized sweet potato
  • (You can use any of the vegetables of your choice like baby corns, bell peppers, green beans etc.)
  • 1 lemon (thinly sliced)
  • 1 tablespoon chopped parsley
  • 1 tablespoon pickled jalapeƱos


For Lemon Sauce:


  • 1 tablespoon butter
  • 2 tablespoons all purpose flour
  • 1/3 cup milk
  • 1 tablespoon cream cheese
  • 1/4 teaspoon mixed herbs
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt


Method:


1. Wash and pat dry chicken pieces.

2. Heat oil in a pan. Place chicken pieces and sprinkle salt, pepper, chili flakes, cumin powder, herbs of your choice and stir fry for 2-3 minutes then remove chicken on a plate.

3. Now wash and cut vegetables of your choice into thick wedges and add to the same pan and place chicken on vegetables and put it into preheated oven. Bake for 30 minutes on 200 degrees. Then remove from oven, place lemon slices, picked jalapeƱos and chopped parsley and bake again for 10 minutes.

To prepare Lemon Sauce:


Melt butter in a sauce pan on medium heat then add flour and stir well and slowly pour in milk. Whisk well and add rest of the ingredients and immediately remove from the burner. Let it cool completely before serving.
